Unsere Backstube - Our Production Philosophy:
- We cultivate our own starter doughs and sour doughs for all our breads.
- We allow for an extra-long dough rest which means more and better taste.
- Therefore we prepare the doughs a day ahead and start the production at 3:00 AM.
- All breads, every single bun and pretzel are handcrafted by our skilled bakers.
- We bake fresh every day.
- We are passionate about baking and love our job.
How to freshen up our Crusty Buns:
From the freezer:
Place the buns on a plate to defrost for approx. 10-15 min. Wet buns on both sides and put them on the toaster for about 1-2 min. each side.
You can also put the buns in the oven for approx. 2-3 minutes at 190ºC or 375ºF.
From the plastic bag or after defrosting:
Wet buns on both sides and put them on the toaster for about 1-2 min. each side.
You can also put the buns in the oven for approx. 2-3 minutes at 190ºC or 375ºF.

How to store our bread:
The best way to enjoy our breads:
Slice the loaf, divide it into the portions needed and freeze them by putting them in a freezer (zipper) bag.
For 1-2 days storage:
Put breads or buns in a plastic bag and seal tightly. Freshen up as described above.
Never put our breads or buns into the fridge, please! At 5ºC our bread will dry out extremely fast because we do not use any stabilizers, bread improvers or preservatives.
